Baked Feta and Tomato Spaghetti Squash

Ingredients

– Spaghetti Squash – Feta Cheese – Cherry Tomatoes – Garlic Cloves – Fresh Sliced Basil

Cut Spaghetti Squash in half and remove seeds. Place cut-side down on lined baking dish and cook for 30-40 minutes until the squash "gives" when you squeeze on the outside

Place a brick of feta in the middle of a pan, surround the cheese with tomatoes and garlic. Drizzle with olive oil, Italian seasoning, salt, and pepper. Stir to coat evenly.  Cook for 30 minutes until tomatoes blister over.

Peel the outer skins of garlic and use a fork to mash everything together. Scrape the spaghetti squash to create strands that look like noodles.  Add "noodles" to pan and stir until everything is well combined. Stir in basil and enjoy!
