This Shepherd’s Pie is a casserole made with layers of cooked meat, low-carb veggies & then topped with mashed cauliflower.

– Ground beef – Onion – Garlic  – Diced tomatoes – Salt – Pepper – Cauliflower – Heavy cream – Butter – Garlic powder – Cheddar cheese – Chives

Brown the ground beef, onion, and garlic. Drain the fat from the mixture. Stir in the tomatoes, salt, and pepper.

While your meat cooks, boil your cauliflower. Drain the cauliflower and return it to the pot. Stir in the butter until the butter is completely melted. Add in the heavy cream, garlic powder, salt, and pepper. Using an immersion blender to blend until smooth and creamy.

Top the beef mixture with the mashed cauliflower, then the cheese. Bake for 20-25 minutes until the top is browning.

You can make this keto casserole up to 2 days in advance! Make up until the bake step, cover, and refrigerate. Bake when you are ready to serve the dish.
