In a large pot combine the oil, onions, peppers, and celery. Saute them over medium heat until the onions are softened.
Add the sausage, italian seasoning, cajun seasoning into the pan and cook until the sausage is cooked through.
Add in the cauliflower, tomatoes, chicken broth, and bay leaves, allow the mixture to simmer for 10 minutes.
In a saucepan with the second half of the oil add in the shrimp over medium-high heat. Halfway through flip the shrimp, cook until the shrimp are pink all over. Add the shrimp to the cauliflower mixture.
