Buffalo chicken meatballs are an easy low carb chicken meatball recipe that is then topped off with buffalo sauce and enjoyed with ranch dressing or blue cheese. Low carb buffalo chicken meatballs make a great dinner, lunch or appetizer.
Preheat oven to 400°F. Lightly grease a 9x13 inch pan.
In a large bowl combine the ground chicken, egg, almond flour, ranch, garlic, salt, and pepper together just until combined. Don't over mix this mixture or you will end up with mush.
Scoop 1 tablespoon of the mixture and roll the mixture into a ball, place it on the sheet pan and repeat this until you have used up all the mixture.
Bake for 11-13 minutes or until they have reached an internet temperature of 160ºF.
Place the buffalo sauce into a large bowl and add in the meatballs, toss until they are well coated. Remove the meatballs from an extra sauce and serve with some blue cheese, scallions, or ranch.
