Keto Lemon Bars. These sugar free lemon bars have the perfect shortbread cookie crust and refreshing lemon flavors that make them the perfect low carb dessert.
Preheat oven to 350°F. Spray a 9 x 13“ pan with nonstick spray and lay a piece of parchment paper in the pan with the edges sticking out so you can easily remove the lemon bars from the pan.
How to make Lemon Bar Crust
In a large bowl add all of your ingredients for your crust and stir together.
Press the crust into your 9 x 13 pan. Bake for 20 to 25 minutes until the crust is golden brown.
How to Make Lemon Bar Filling
In a medium bowl mix all of the ingredients for the filling together until well combined. Pour over the crust.
Bake for 15 to 20 minutes until filling has set.
Sprinkled with the powder Monk fruit over the top of the bars then slice them into individual servings when ready to serve.
