Ingredients
2
large English cucumbers
thinly sliced
2
teaspoons
salt
1/2
medium red onion
sliced
3
tablespoons
red wine vinegar
1/2
cup
fresh dill
2
tablespoons
olive oil

teaspoon
pepper
Instructions
Wash and dry the cucumbers. Slice thinly using a mandolin.
In a medium mixing bowl, combine the cucumber and salt, allow them to sit for 10 minutes for the salt to soften the cucumber.
In a small mixing bowl, combine the red onion with the vinegar, allow it to sit for 10 minutes.
Mix the onion mixture into the cucumbers. Add in the dill, olive oil, and pepper, stir well.
Place the salad into the fridge for 10 minutes to chill.
