This Low Carb Chicken and Cauliflower Rice Soup is the perfect week night meal. With just a few ingredients including chicken, cauliflower rice and cheese this low carb and keto chicken cauliflower rice is an easy week night dinner meal the whole family will enjoy.
1packet ranch mix or 2 tablespoons of homemade ranch seasoning
12ozGreen Giant Cauliflower Risotto Medley Riced Veggies or a bag of frozen riced cauliflower that you prefer.

InstantPot Directions
In the pot of your presser cooker or instantpot place the chicken breast and chicken stock. Set the pressure cooker for 15 minutes.
Use the quick release to remove the steam once 15 minutes have passed.
Using two forks shred the chicken. Turn the cooker to saute low.
Add in the Green Giant Cauliflower Risotto Medley Riced Veggies.
Add in the cream cheese, cheese, and ranch and stir until all the cheese has melted.

If you do not have an InstantPot cook your chicken by your preferred method (baking, boiling or even a cooked rotisserie chicken from the store).
In a large pot over medium heat add the chicken stock and cooked chicken and bring to a boil.
Once at a boil, turn the heat to low and add in the Green Giant Cauliflower Risotto Medley Riced Veggies, cream cheese, cheese, and ranch and stir until all the cheese has melted.
