In a medium bowl, stir together the eggs, tomatoes, basil, heavy cream, salt, and pepper.
Heat a medium nonstick skillet over medium heat. Spray the pan with a nonstick spray.
Add half of the egg mixture to the pan. Swirl the eggs around the pan making sure the whole pan is coated. Once the egg starts to set tilt the pan every now and to help cook the mixture.
Once most of the eggs have cooked sprinkle half of the cheese onto the eggs.
Using a fork, roll the cooked egg to form an omelet roll, until it has been tightly rolled.
Follow the same steps to make the second rolled omelet with the remainder of the eggs and cheese.
