3 4ouncechicken breasts or 1 pound of chicken breasts cut into 3 pieces
1cupparmesan cheese
1cuppork rindscrushed
1/2teaspoongarlic powder
1/2teaspoononion powder
1/2teaspoonItalian seasoning
1/2teaspoonsalt
1/2teaspoonpepper
2large eggs
1teaspoonheavy cream
1cupno sugar added marinara sauce
1/2cupmozzarella cheese
Instructions
Preheat air fryer to 370ºF.
In a medium shallow container like a pie plate, combine the parmesan cheese, pork rinds, garlic powder, onion powder, Italian seasoning, salt, and pepper.
In another medium shallow container whisk together the eggs and heavy cream.
Dip the chicken breast into the egg mixture then into the pork rind mixture, making sure both sides are evenly coated. Repeat this with each chicken breast.
Place the chicken into the air fryer for 10 minutes. Flip the chicken after ten minutes and top with the sauce and mozzarella cheese. Cook for an additional 6-8 minutes until the chicken reaches an internal temperature of 160ºF.
