In a small pot whisk together the egg yolks and the erythritol until well combined.
In another small pot bring the heavy cream, almond milk, nutmeg, and cinnamon, to a boil over medium high heat.
Once the cream mixture comes to a boil remove the cream off the heat. Slowly whisk in a quarter of a cup of the mixture into the egg yolks making sure you are constantly stirring the egg yolks to prevent them from coagulating.
Place the pot back over medium heat, making sure you keep stiring until the mixture has thickened up about 10 to 15 minutes and the mixture has reached 160ºF.
Remove the mixture from the heat and stir in the vanilla extract. Allow the mixture to cool then place it in the fridge overnight to allow the flavors to combine.
If you don't like the texture of the spices in your egg nog you can strain it into a cheesecloth to give it a smoother texture.
