Rinse and chop up your fresh strawberries. Place the strawberries in a small bowl and add 1/2 tablespoon granulated swerve. Mix the strawberries with the swerve and set aside.
In a bowl mix the almond flour, egg, mozzarella cheese, granulated swerve and vanilla extract.
Pour 1/3 of the batter into your mini waffle maker and cook for 3-4 minutes. Then cook another 1/3 of the batter and the rest of the batter to make 3 keto chaffles.
While your second chaffle is cooking, make your keto whipped cream if you do not have any on hand.
Assemble your Strawberry Shortcake Chaffle by placing whipped cream and strawberries on top of your sweet chaffle. Then drizzle the juice that will also be in the bowl with the strawberries on top.
