Place eggs in a large saucepan or a large pot, and add water to cover by an inch. Bring to a roiling boil, cover with a lid, and remove from heat.
Let sit for 10 minutes then drain the water or transfer eggs to a bowl of ice water using a slotted spoon and let the cooked eggs cool completely. I find it best to use an ice bath and but cold water and ice into a large bowl and place the eggs in it until they are cooled.
Peel the hard boiled eggs and discard the egg shells.
With a knife cut the eggs in half length wise and remove the egg yolks. Place the yolks into a small bowl and set aside.
Cook the bacon until crispy. Slice one piece of bacon into 24 pieces and crumble the remaining 2 pieces of bacon.
Add the crumbled bacon to the egg yolks.
In the small bowl add the mayonnaise, mustard, chopped scallions, salt and pepper.
Mash everything together until it is creamy and smooth.
Place the egg yolks mixture into a medium resealable freezer bag and cut off a 1/2 inch from one of the corners or use a piping bag. Pipe the egg yolk mixture into the egg white halves. You can also spoon the filling but i think it looks better when pipped.
Top them off with thinly sliced scallions and the crunchy bacon slices.
