Burrito bowls are an easy to make dinner that my whole family loves. Traditionally they have carb filled ingredients but with this keto Barbacoa Burrito Bowls recipe, we have made it low carb while being loaded with flavor. These Beef Barbacoa Burrito Bowls are my low carb homemade alternative to going to Chipotle. These tasty keto burrito bowls have all the flavors of a chipotle burrito bowl without the high cost and carbs that is normally associated with it.
Whenever I make slow cooker barbacoa with barbacoa tacos being our main course we tend to have leftovers. That means the next day is perfect for making burrito bowls with the beef Barbacoa. These bowls are super easy to put together. If you have the Cilantro Lime cauliflower rice and the Barbacoa made already you can have dinner done in under 10 minutes! It is the perfect way to change up dinner with the same already made ingredients.

Add Flavorful Toppings
It is very easy to customize barbacoa beefburrito bowls to have the toppings you like the most. I like to make my life easier at dinner time by letting everyone make their own bowls. I normally go with making things easy and just add chopped cilantro, diced tomatoes, and sour cream but if you want to change things up. You can add things like green peppers, avocados, red onion, homemade salsa, homemade guacamole, pico de gallo, Mexican cheese, or cheddar cheese. Just pick your favorite toppings for burritos and tacos and put them on top of the barbacoa and cauliflower rice.
Like spice? Add some spice with sliced Jalapeno peppers or some chipotle peppers.
If you have family members who are not low carb they can add toppings like sweet corn, corn salsa, pinto beans, black beans, and change out the cilantro lime cauliflower rice for white white rice or brown rice.
Meal Preping tips
If you are looking for an easy to make meal prep recipe this one is one of my go tos. You can make the barbacoa and cauliflower rice and then in serving containers fill them with the burrito bowl ingredients and store them in the fridge. I do suggest putting the cold ingredient toppings in a small container and the beef and cauli rice in another so you can reheat them and then add the toppings when you want to eat it.
Barbacoa Burrito Bowls Ingredients
Cilantro Lime cauliflower rice. To keep things low carb instead of using rice we have changed things and made a low carb rice alternative that has all the flavors of traditional rice.
Slow cooker barbacoa. Easy to make right in your slow cooker, this recipe is the perfect Barbacoa recipe.
Tomatoes. I like using fresh diced tomatoes, you can also add other vegetables on top as well.
Sour Cream. When sticking to a low carb and keto diet it is best to use full fat sour cream.
Cilantro. Fresh cilantro is best. All you have to do is wash it off and then chop it with a knife.
How to Make Beef Barbacoa Burrito Bowls
This barbacoa bowl recipe starts with slow cooker beef barbacoa that is made with beef chuck roast, once it is done cooking shred it with a fork.
While letting the barbacoa sit in the slow cooker make the low carb cilantro lime rice made with cauliflower rice.
Wash and chop all of the toppings you are going to have and set them aside.
In a serving bowl or on a plate add the Cilantro Lime Cauliflower Rice.
Then add the diced tomatoes and any other topping you want to.
Then top with the barbacoa.
Add a dollop of sour cream and sprinkle with some cilantro.

- 3 cups Cilantro Lime cauliflower rice
- 1 cup tomatoes diced
- 3 cups slow cooker barbacoa
- 3 tablespoons sour cream
- 1 tablespoon cilantro
- Cook the Beef barbacoa in the slow cooker.
- Make the Cilantro Lime Cauliflower Rice.
- Wash and dice the tomatoes,
- In a serving bowl add the Cilantro Lime Cauliflower Rice then add the diced tomatoes and top with the barbacoa.
